To give you some more information on the inline block set up, I’ve received the below from Steve which I hope is helpful.
The setup used to add those infinite blocks to pages to date has been to add them to the Blocks content item, like the first screenshot attached.
For pages like Bioinformatics - https://www.staging.babraham.ac.uk/node/813/edit?destination=/admin/content - there is an Inline Blocks content block that uses something called Paragraphs which is a Drupal Core way to add content, it has come a long way over the years and is the recommended way to add content to the pages like the Infinite Blocks.
The Blocks content item uses a module called Stacks, which at the time it was added provided the flexible functionality you’ve been used to here. It offered the ability to do things that Paragraphs can now do but wasn't perhaps completely possible at the time it was first setup. During this work we created a new content block called Blocks (New) which uses Paragraph and sits under Blocks, this has only been added to Inner Page content type for now – see second screenshot attached.
This new Paragraphs block Blocks (New) is the way we recommend creating Inner Page pages. For the new child pages you can use this block to add the main full width page content and ensure the pages can be built out in the way you wanted.
